食谱:月饼


水果燕菜月饼

Ingredients材料
(A)Egg yolk 蛋黄
125ml water水
40g sugar糖

100ml mango paste 芒果泥

1tsp agar-agar powder 燕菜粉
80 ml fresh milk/evaporated milk 鲜奶或奶稀


(B) Filling馅料
300g water 水
70g sugar 糖
3 tsp agar-agar powder 燕菜粉
150g evaporated milk or milk 牛奶或奶稀

150g dragon fruit paste 龙珠果泥


(C)Pastry 皮
600ml water 水
60g sugar 糖
3 tsp agar-agar powder 燕菜粉
150 ml santan 浓椰浆

Steps方法 :
Egg yolk 芒果泥蛋黄的做法:
1. Boil water, sugar,mango paste and agar-agar powder together until sugar and agar-agar powder dissolved.

水煮沸,加入龙芒果泥,糖,燕菜粉,煮至溶解
2. Remove from fire and stir in the milk .

离火,加入奶稀或牛奶

3. Pour into the ice-cube mould and leave it to set.

倒入蛋黄模型。

4. when the agar is set ,remove from mould,scratch on the surface and put the yolk into the filling mould for making the filling

燕菜硬了,从模倒出,画花其表面,放入馅料模,以作馅之用


Filling:龙珠果馅料的做法
1. Boil water, sugar and agar-agar powder ,dragon fruit paste together until sugar and agar-agar powder dissolved.

煮沸水,加入龙珠果泥,糖,燕菜粉,煮至溶解
2. Remove from fire and stir in the milk 。

离火,倒入牛奶或奶稀

3. Pour it into the mould.

倒入馅料模
4. Place an egg yolk into the agar-agar.

放入芒果泥蛋黄,在中间
5. Leave it to set.

让燕菜成形
6. Remove agar-agar from mould, use a fork and scratch on it surface. (This allow the filling to stick onto the pastry.) 将硬化了的龙珠果燕菜从模倒出,刮花其表面,以作饼皮之用

Pastry: 皮
1. Boil water, sugar and agar-agar powder together until sugar and agar-agar powder dissolved.

煮沸水,加入糖,燕菜粉
2. Remove from fire and stir in the milk

煮沸后,离火,加入浓椰浆



Assemble the agar-agar:最后步骤 ,制成月饼:
1. Pour the pastry mixture into the mould about 1/4 full.

将好了的椰浆燕菜,倒 1/4入月饼模中
2. Let it half set then place the filling onto the agar-agar.

当皮已半凝固时,放入龙珠果馅
3. Fill up the mould with the agar-agar mixture.

再倒入菜燕皮料,将月饼模装满
4. Leave it to set and chill in the fridge.

凝固后,可放入冰箱
5. Loosen the side of the agar-agar, invert it and gentle press the agar-agar out of the mould.

将月饼从模轻轻倒出即可
